Pectin is a natural plant ingredient, classified as dietary fiber. Pectin has a gelling and thickening effect, so it will successfully replace gelatin. Pectin is extracted from plants, available as an odorless powder with a sweetish taste. They dissolve well in water and in solutions with large amounts of sugar. Pectin will work well at home as a natural gelling agent for making jellies, jams and marmalades.
