Swiss Water® Process is a decaffeination process that is based on the use of water and the appropriate temperature and time parameters, without the use of other solvents. Thanks to such an endeavor, the coffee does not have the bitter taste characteristic of decaffeinated coffees, and its natural flavor qualities are preserved. The process itself was patented in 1979 in Switzerland by the Coffex company - hence its alternate name - Swiss Water Process. It is worth noting that decaffeinated coffee subjected to this solution is as much as 99.9% free of caffeine.
