DESCRIPTION
Italians usually prepare their favorite risotto using rice of the Carnaroli variety, which differs from the more common Arborio rice in that it has a higher starch content, a harder center of the grain and a longer shape. These properties result in a typically Italian risotto that has a perfectly creamy texture but the rice grains always remain firmly "al dente" in the center.

METHOD OF PREPARATION
It takes half a liter of water to cook 100 g of rice.
Cook in boiling salted water over low heat for about 14-16 minutes.
