Genmaicha is high-quality sencha green tea combined with grains of roasted rice ("genmai"). The rice is specially steeped and steamed before it is dried and roasted. The combination of sencha leaf infusion and rice gives genmaicha its characteristic refreshing, mildly nutty flavor, strong aroma and rusty green color. For centuries, genmaicha was regarded in Japan as a drink for the poorest people who could not afford to drink sencha alone. Added rice, increased the volume of the tea and gave it additional flavor. Over time, genmaicha became popular among all levels of society in Japan and then around the world where it earned the nickname "popcorn tea" (because the roasted rice grains resembled roasted corn from a distance). In Japan, genmaicha is often drunk by monks during long periods of fasting. By virtue of its relatively low sencha content (50%), it is a tea with a fairly low caffeine content. It is prized for its high mineral content (magnesium, calcium and potassium). Due to its digestive-supporting effects, it is traditionally served with meals.
