DESCRIPTION
Organic guar gum is a natural thickener obtained from the endosperm of the seeds of the bean plant, Cyamopsis tetragonolobus. Guar gum can be used as a neutral-tasting and odorless replacement for gelatin. It has good solubility in water and also thickens products without heating them. Its properties make it an ideal addition to sauces, dressings, soups, jams or desserts.
Preparation: dissolve 1 g of guar gum (1/4 teaspoon) in 100 g of the product to be thickened.
