Kukicha is a green tea composed entirely of twigs and leaf stalks - those parts of the tea plant that are not found in other teas. Hence its name: "kuki" in Japanese means stem or stick. Kukicha is made during the production of other green teas when the leaf blades are separated from the other parts. Its taste is definitely different because of this: softer, sweeter and slightly nutty. Thanks to its negligible caffeine content, kukicha is great for drinking for children, pregnant women and at late hours of the day. For this reason it is also, along with hojicha, a frequently recommended tea in macrobiotic diets. Kukicha also has a high content of the relaxing theanine. The theanine in the leaves during photosynthesis changes into tannins, which give a "bitter" aftertaste in the tea. Since photosynthesis does not occur in the stems, they have a naturally high theanine content. Moya Kukicha is the highest quality kukicha, which is made during the matcha production process when the leaves and stems are separated from the aracha (tea leaf blades - a matcha intermediate). Unlike regular kukicha, it is very lightly roasted (much shorter than hojicha). This gives it a stronger aroma and a darker yellow-brown color.
